Buy the hoisin sauce at a Chinese grocery store, or look for imported brands at the supermarket. The popular brands taste only like thickened soy sauce. Hoisin sauce has a distinct anise flavor.

SZECHWAN PERCH

Heat oven to 425 degrees F.

Skin the perch fillets and place in a flat baking dish large enough to hold them in a single layer.

In a small bowl, combine the rest of the ingredients. Pour sauce mixture over entire surface of perch fillets. Turn fillets over in sauce to coat both sides, finishing with the skinned side down.

Bake for 10 to 15 minutes, until internal temperature of fish reaches 145 degrees F.

Serve on a bed of boiled white rice. Eat with chopsticks.
