Like mince pies but a lot faster to make.
Heat oven to 400 degrees F.
Beat egg white until it is thoroughly blended.
Roll out a recipe for shortcrust pastry to 1/8 inch thickness. Using a fluted 4–inch round cutter, stamp out circles of pastry until the pastry is used up.
Brush edge of one-half of each pastry circle with egg white. Put a level 1/2 tablespoon mincemeat on the circle. Fold pastry circle over, sealing the edges of the turnover with the tines of a fork dipped in flour. Prick the top with fork tines. Brush over with more egg white, and sprinkle with sugar. Arrange turnovers on an ungreased cookie sheet. Bake for 15 minutes.
Let rest 5 minutes. Serve warm.
Yield: 11 turnovers
Can be reheated in a 350-degree F. oven for 10 minutes.
