HERBES de PROVENCE (chez Collins)

Grind up the fennel seeds before blending with the other dried herbs. Before using, rock the jar in your hands to to ensure the herbs are evenly mixed.

Yield: 16 grams, enough to fill half a typical spice jar

The commercial version of Herbes de Provence is an aromatic blend of dried herbs: basil, fennel, lavender, summer savory, and thyme. To make your own, mix together equal weights of each herb and store in an airtight jar.

Not liking the lavender component all that much, we modified the herb blend as above.
