HALIBUT with BACON and ONION

Heat oven to 500 degrees F.

Flavor the milk with some salt. Dip the halibut in the salted milk, then crushed corn flakes or breadcrumbs. Place on rack to dry some.

Chop the bacon. Slice the onion thinly. Grease a flat baking pan and put in the bacon, with the sliced onion on top of the bacon. Place the halibut on top of the bed of bacon and onion. Dot the halibut with the butter. Bake for about 10 to 20 minutes, depending on thickness, to an internal temperature of 145 degrees F.

Serve with lemon wedges and Warm Tartar Sauce.
