CREAMY CUCUMBER SALMON FILLET

In a small bowl, combine all the ingredients except the salmon fillet.

Skin the salmon fillet and place in a flat baking dish. Spread sauce mixture over entire surface of salmon fillet. Cover with glass lid or pleated plastic wrap.

Cook in an 1100-watt microwave oven on MEDIUM-HIGH (70% power) for about 4 minutes 30 seconds to 5 minutes 15 seconds.

Let rest 5 minutes before serving.

Serve with boiled white rice.
