A “one-pot” meal.
Heat oven to 350 degrees F.
Heat oil in frying pan; cook onion and green pepper until soft, about 5 minutes.
Add tomatoes, salt, and pepper and cook for 10 minutes.
Rinse cod fillet. Place cod in a baking dish (with cover) big enough to hold it in a single layer.
Spread tomato/pepper mixture over cod fillet(s). Cover and place dish in oven and bake 20 to 25 minutes.
Serve over white rice.

Equally good cooked in an 1100-watt microwave oven. Microwave on HIGH (100% power) for 3 minutes 25 seconds to 4 minutes 16 seconds. Let stand for 5 minutes before serving.
