This recipe yields the equivalent of half a loaf. For the more usual 8.5"×4.5"×2.5" (5 U.S. cups) loaf, double the recipe, cook for one hour, and cool for 30 minutes before turning out of the pan.
Heat oven to 350 degrees F. Spray a 7.5"×3.75"×2" loaf pan with cooking spray.
Mix first four ingredients and set aside.
Process sugar, lemon juice, butter, and egg with steel blade until well mixed, about 20 seconds. Scrape down; add banana, and process 5 seconds, or until banana chunks are evenly distributed. Add walnuts, turn machine on and immediately off. Add flour mixture. Turn machine on and immediately off 4 or 5 times, or until flour just disappears. DO NO OVERBEAT.
Pour unto prepared loaf pan and bake 48 minutes, or until toothpick comes out dry when testing cake.
Let stand 24 minutes. Turn cake upside down onto a wire rack. Cool.
Yield: 1 7.5"×3.75"×2" loaf
